Served with warm buckwheat blinis and traditional accompaniments.


Second Course

Scallop Ceviche
Thinly sliced scallops with extra virgin oil, myer lemon and radish, topped with osetra caviar.

Traditional preparation.

Foie Gras
Pan seared foie gras with persimmon and apples on toasted walnut brioce.


Third Course

Black Cod
Pan seared cod with cabbage and beans, manila clams and shaved black truffle.

Boeuf à la Stroganoff
Waygu beef filet topped with seared foir gras over large noodles, wild mushrooms cream and shaved black truffles.

Duck Breast
Pan roasted duck breast with sweet potato puree, roasted salsify, parsnips and a port reduction
